The hilly area of Ama, located between 450 to 550 meters above sea level, has always been suited to a low production per plant, but is able to generate an extremely fruity, fine and elegant oil, fragrant, with good balance and roundness. This oil is on par with the exquisite wines produced by Castello di Ama. A blend of four olive varieties (Correggiolo, Moraiolo, Frantoio and Leccino) grown in the bucolic countryside of Chianti Classico zone. The olives are hand harvested from an orchard of 10,000 trees. Small batches of olives are pressed the same day as picked, assuring low acidity with dedicated focus on quality over quantity. The unfiltered oil is opaque green in color with a fruity aroma, a strong earthy flavor up front and a lively, peppery finish. A limited quantity of only 8,000 bottles is produced in a typical year.

There is no such thing as «the best olive oil». And I would never say that ours is the best. I will, however, say that some may and do care for their trees and olives as much as we do, but none more than us. All our trees are organically raised and kept, the soil around them tilled and tilled again; all expertly pruned every two years. The olives are all hand picked, and every day’s harvest cold pressed every evening. The oil is then left to naturally decant until February-March and is bottled without filtering. Our volcanic soils confer sweetness and finesse to it, and a lovely bouquet. The cold nights inhibit our fruit's worst enemy, the olive fly. The result is an outstanding Extra Virgin Olive Oil. Costs are very high. We lose a little money every year. Someday soon I hope to break even. It doesn’t really matter that much, especially when you see the newly pressed gold-green olive oil gushing free from the press. Upon harvest the olives are immediately crushed at an onsite facility. The olives go through a cold press process at a maximum temperature of 15 degrees celcius. Only use the oil from the first pressing is bottled. Aromas of fresh herbs, artichoke and green tomato; flavor both full and delicate due to the cold process which preserves the special characteristics of the oil.

All the various meats and seasonings mingle with the mild but sturdy beans and with a little effort, you have one of the classic dishes of southwest France.
