This is the estate's flagship wine with 100,000 bottles produced (representing 70% of the winery total). The Domaine Sigalas Santorini Assyrtiko delivers marine influences with salty overtones around a core of honeydew melon and white peach. The wine's volume is driven mostly by its fruit flavors, but there is a subtle hint of sweetness to close. It sees stainless steel only. What makes this wine stand apart, however, is the impressive intensity of the mouthfeel and its lingering concentration. That rich fruit shows solid runway for bottle aging. Drink 2024‑2035. Produce of 100% Malagousia fruit sourced exclusively from the sustainably-farmed estate vineyards of Ktima Gerovassiliou at Epanomi near Thessaloniki and near the coast where the Thermaic Gulf meets the Aegean Sea. The soils here are mainly sandy with a few clayey substrates and calcareous rocks. Bright platinum/yellow in color with aromas suggestive orchard fruits like apricot and quince, green melon and the salt sea; gently rich and tactile on entry with a balancing streak of vivid firm fruity acidity and pithy fruit that keeps all fresh and in balance, finishing with a flourish of mouthwateringly fresh flavor.
